- 2 cups milk
- 110 g sugar
- 4 egg yolks
- 1 cup cream
- 1/2 tsp pure vanilla extract
- pinch of salt
- 5 regular size Oreo cookies, chopped roughly
Pour the cream into a clean bowl set over the ice bath.
Pour the milk into a saucepan add 80 g of sugar and a pinch of salt. Stir to combine. Place over medium heat until it registers 77 degree C.
In a bowl, whisk together the egg yolks and 30 g of sugar until pale and thicken.
Carefully temper the egg yolk with hot milk mixture by slow adding. Pour the egg and milk mixture back to the saucepan and return to the stove top. Stir continuously over the medium heat until it registers 85 degree C. Make sure do not let it boil. Remove from the heat.
Pour the heated custard through a fine-mesh strainer into the cold cream, add vanilla extract and stir until incorporated and completely cooled. Chill the mixture in the refrigerator 4 hours before processing in the ice-cream maker.
When ready, pour the chilled mixture into the ice-cream maker and process according to
the manufacturer's specifications.
Remove the finished gelato from the ice-cream maker, stir in chopped cookies and place in the container. Place the gelato in the freezer until it set before serving.
