Tomato Salsa
- 300 g fresh tomatoes, diced into small pieces
- 3 shallots, finely chopped
- 3 chillies, seeded and finely chopped (optional, can omit if you don't like heat)
- 2 TBSP roughly chopped cilantro
- 2 tsp lime juice
- 2 tsp extra virgin olive oil
- salt
- freshly ground black pepper
- 1 loaf of baguette
- 2 TBSP unsalted butter
Slice the bread into small pieces and fry them in a hot pan with butter until golden on both sides. Put it aside.
In a small mixing bowl, add all first six ingredients listed above together follow by black pepper and salt to taste. Gently toss it together. Serve it with baguette.
