Lychee raspberry popsicles

I'm a big fan of lychees. Other than eating them fresh, I make them into popsicles. They are a big hit with my boys.  They keep coming back to ask if the popsicles are ready after I first put them into the freezer to set.  Nice and cold, perfect for the hot weather months. 




Lychee raspberry pops
makes 8 pops
650 g lychees, seeded
80 g raspberries, strain through a fine sieve to remove the seeds
2 TBSP simple syrup

Blend lychee, raspberry and simple syrup together in the blender until smooth and pour the mixture into the popsicle molds. Put them in the freezer at least 4 hours before served.

Simple syrup
1 cup sugar
1 cup water
Put sugar and water into heavy bottom sauce pan. Let it boil until the sugar dissolve.

  2. I love lychee and raspberry too. Unfortunately, I hardly get them fresh here. Only frozen or in a can.
